Corned beef is juicy and tender on it’s own – add melted swiss, tangy sauerkraut and thousand island and you’ve got a keto snack bursting with flavor.
Grab these while heading out to work and you’ll have a satisfying snack sure to hold you over to dinner.
|Yields:||Prep Time:||Total Time:|
|1 lb||corned beef, shredded|
|8 oz||swiss cheese|
|8 leaves||green leaf lettuce|
|2 tbsp||ketchup (low-sugar)|
|2 tsp||onion, diced|
|1 tsp||white vinegar|
|⅛ tsp||sea salt|
*mix all dressing ingredients in a small blender and refrigerate until use
|1||Preheat oven to 400°F|
|2||Lay corned beef on parchment paper-lined baking sheet. Top with sauerkraut and swiss cheese. Bake 5 minutes, until cheese is melted|
|3||Lay romaine lettuce leaves flat and top with corned beef, sauerkraut, and cheese filling. Roll into wraps|
