Corned beef is juicy and tender on it’s own – add melted swiss, tangy sauerkraut and thousand island and you’ve got a keto snack bursting with flavor.

Grab these while heading out to work and you’ll have a satisfying snack sure to hold you over to dinner.

The Recipe

Yields: Prep Time: Total Time:
8 servings

Ingredients (wrap)

Qty: Item:
1 lb corned beef, shredded
1 lb sauerkraut
8 oz swiss cheese
8 leaves green leaf lettuce

Ingredients (dressing)

Qty: Item:
½ cup mayo
2 tbsp ketchup (low-sugar)
2 tbsp relish
2 tsp onion, diced
1 tsp white vinegar
⅛ tsp sea salt

*mix all dressing ingredients in a small blender and refrigerate until use

Directions

1 Preheat oven to 400°F
2 Lay corned beef on parchment paper-lined baking sheet. Top with sauerkraut and swiss cheese. Bake 5 minutes, until cheese is melted
3 Lay romaine lettuce leaves flat and top with corned beef, sauerkraut, and cheese filling. Roll into wraps
4 Enjoy as-is or in dipped in thousand island dressing (or your favorite sauce)
