These snacks are rich and satisfying. They keep well and are great to make ahead early in the week.

You can use Jimmy Dean breakfast sausage, but we like Chorizo for an extra-savory mexican twist.

Keep these cheesy puffs on hand and you’ll never have to worry about hunger between meals.

The Recipe

Ingredients

eggs
4 ½ tbsp butter, melted
2 tbsp sour cream
2 cups cheddar cheese, shredded
1 lb chorizo
⅓ cup coconut flour
¼ tsp sea salt
¼ tsp garlic powder
¼ tsp baking powder

Directions

1 Preheat oven to 375°F. Line large baking sheet with parchment paper
2 Melt butter and cool in refrigerator 5 minutes
3 Brown chorizo in skillet over medium heat
4 In medium bowl, whisk butter, eggs and sour cream
5 Mix in coconut flour, baking powder, salt and garlic powder
6 Mix in chorizo and cheddar cheese
7 Roll mixture into 1 inch balls on lined baking sheet (space evenly)
8 Bake 15-18 minutes, until lightly browned
