Then make these Keto Cheesy Chorizo Egg Bites – and turn a country breakfast into your keto on-the-go snack.

These snacks are rich and satisfying. They keep well and are great to make ahead early in the week.

You can use Jimmy Dean breakfast sausage, but we like Chorizo for an extra-savory mexican twist.

Keep these cheesy puffs on hand and you’ll never have to worry about hunger between meals.

The Recipe

Ingredients

eggs
4 ½ tbsp butter, melted
2 tbsp sour cream
2 cups cheddar cheese, shredded
1 lb chorizo
⅓ cup coconut flour
¼ tsp sea salt
¼ tsp garlic powder
¼ tsp baking powder

Directions

1 Preheat oven to 375°F. Line large baking sheet with parchment paper
2 Melt butter and cool in refrigerator 5 minutes
3 Brown chorizo in skillet over medium heat
4 In medium bowl, whisk butter, eggs and sour cream
5 Mix in coconut flour, baking powder, salt and garlic powder
6 Mix in chorizo and cheddar cheese
7 Roll mixture into 1 inch balls on lined baking sheet (space evenly)
8 Bake 15-18 minutes, until lightly browned

    I made these and they were perfect. Can I freeze them in my food saver?

    I see that the recipe was incomplete so I modified it by adding an extra tablespoon of coconut flour.. I added all the spices in egg, butter and sour cream mixture. I used a mini muffin tin pan, sprayed with olive oil and they came out perfect. Side note, I used garlic pepper, sea salt, onion powder and jalapeño salt. I also used a paper towel and dabbed the chorizo to take out excess grease. They’re delicious!

    Can I substitute Almond flour instead of coconut flour?

    Mine don’t look like the picture. They are flat. Will cook in muffin tin next time.

    Just finished making these tastey bites; the directions are incomplete…..does not say to add items ie salt; garlic powder. Also found too wet to roll so dropped by spoonfuls and only made 23…..so maybe correct the directions. Taste is great!!
