These snacks are rich and satisfying. They keep well and are great to make ahead early in the week.
You can use Jimmy Dean breakfast sausage, but we like Chorizo for an extra-savory mexican twist.
Keep these cheesy puffs on hand and you’ll never have to worry about hunger between meals.

|4 ½ tbsp||butter, melted|
|2 tbsp||sour cream|
|2 cups||cheddar cheese, shredded|
|⅓ cup||coconut flour|
|¼ tsp||sea salt|
|¼ tsp||garlic powder|
|¼ tsp||baking powder|
|1||Preheat oven to 375°F. Line large baking sheet with parchment paper|
|2||Melt butter and cool in refrigerator 5 minutes|
|3||Brown chorizo in skillet over medium heat|
|4||In medium bowl, whisk butter, eggs and sour cream|
|5||Mix in coconut flour and baking powder|
|6||Mix in chorizo and cheddar cheese|
|7||Roll mixture into 1 inch balls on lined baking sheet (space evenly)|
|8||Bake 15-18 minutes, until lightly browned|
