It’s a waffle made out of cheese and eggs (and for our version, almond flour too).

Chaffles are low carb. Keto friendly. And they taste just like an Eggo Waffle (YUM!).

The best part is you can customize them thousands of ways.

You’ve got pizza chaffles. Peanut butter chaffles. Churro chaffles.

The possibilities are endless!

But today we’ll show you how to make our #1 favorite:

Maple Candied Pecan Eggo Chaffles.

This easy recipe starts with keto candied pecans – perfectly sweetened with a crunchy candy-like coating.

Top with homemade keto whip cream and sugar-free maple syrup and you have an indulgent breakfast that is 100% guilt-free.

This recipe makes a stack of 3 waffles – share at the breakfast table or keep all to yourself :)

The Recipe

Ingredients

2 eggs
1/4 cup
mozzarella cheese, fine shredded
1/4 cup almond flour (we use Blue Diamond)
1 tbsp Erythritol, powdered (we use Lakanto)
1/4 tsp baking powder
1 pinch salt (we use Redmond Real Salt)
1 cup heavy whipping cream
2 tbsp Sugar-free syrup (Choc Zero Maple is our favorite)
1/4 cup Keto Candied Pecans (you can our Maple Candied Pecans or make them from scratch with this recipe)

Directions

Make the whipped cream:

1 Add heavy whipping cream, 2 tbsp erythritol and vanilla extract to bowl
2 Beat on medium with electric beater, until soft peaks form
3 Store on countertop if using immediately, refrigerate otherwise.

Make the chaffles:

1 Plug in your waffle maker to heat. (we use the Dash Mini)
2 Add eggs to small bowl and whisk with fork
3 Add mozzarella, almond flour, 1 tbsp erythritol, baking powder and pinch of salt to bowl. Stir to combine.
4 Spray waffle maker with non-stick spray.
5 Add 1/3rd of the batter to waffle maker and cook 3-4 minutes, until golden brown.
6 Remove waffle and repeat twice more with remaining batter.
7 Top with candied pecans, whipped cream, and sugar-free syrup
